A delightful and savory tart featuring the flavors of ripe tomatoes, fresh basil, zucchini, and creamy goat cheese on a flaky puff pastry crust.
Ingredients:
- 1 sheet of puff pastry
- 2 medium tomatoes, thinly sliced
- 1 small zucchini, thinly sliced
- 1 cup fresh basil leaves
- 4 oz goat cheese, crumbled
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
Preheat your oven to 375F 190C
Roll out the puff pastry sheet on a lightly floured surface to fit your tart pan or baking sheet
Place the puff pastry into the tart pan or onto the baking sheet
Layer the thinly sliced tomatoes evenly on the puff pastry
Add the thinly sliced zucchini on top of the tomatoes
Sprinkle the crumbled goat cheese over the tomatoes and zucchini
Tear the fresh basil leaves and scatter them over the tart
Drizzle the olive oil over the tart and season with salt and pepper to taste
Bake in the preheated oven for about 20-25 minutes or until the pastry is golden and the vegetables are tender
Remove from the oven and let it cool slightly before slicing and serving
