This simple vegan pasta dish is great for a quick dinner during the week or whenever you want a tasty and filling meal. It tastes great and is good for you because it's full of colorful vegetables and protein-rich chickpeas.
Ingredients:
- 250g pasta of your choice
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 can 400g chickpeas, drained and rinsed
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
Cook pasta according to package instructions until al dente
Drain and set aside
In a large pan, heat olive oil over medium heat
Add diced onion and minced garlic
Saut until fragrant and onions are translucent
Add sliced red bell pepper and diced zucchini
Cook until slightly softened
Stir in cherry tomatoes, chickpeas, dried oregano, and red pepper flakes
Cook for another 3-4 minutes
Add cooked pasta to the pan and toss everything together until well combined
Season with salt and pepper to taste
Garnish with fresh basil leaves before serving
Serve hot and enjoy!
