They taste just like chocolate chip oatmeal cookies, but they are in the form of muffins. They make a quick and tasty breakfast treat or snack any time of the day.
Ingredients:
- 1 1/2 cups rolled oats
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup chocolate chips
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups buttermilk
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
Instructions:
Preheat your oven to 375F 190C and line a muffin tin with paper liners
In a large mixing bowl, combine the rolled oats, all-purpose flour, granulated sugar, brown sugar, chocolate chips, baking powder, baking soda, and salt
In another bowl, whisk together the buttermilk, vegetable oil, egg, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Do not overmix
Divide the muffin batter evenly into the muffin cups
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
